Named after Ethiopia's national tree, Acacia Coffee comes from smallholder farmers in the Yirgacheffe, Guji and Sidamo regions. The sweet, fruity profile of this coffee was chosen to represent the classic flavors of some of Ethiopia's most famous coffee growing regions. The coffees reflect the work of entire communities.
In these southern regions of Ethiopia, farmers pick coffee selectively, harvesting only ripe cherries one by one by hand. Pickers rotate between the trees every eight to ten days, selecting only the cherries that have reached peak ripeness. In communal washing stations, the coffee is pulped and washed by hand in cement canals. After fermentation in water to loosen the mucilage, the coffee is agitated with wooden paddles to loosen any remaining mucilage. The coffee is then placed on dry beds to dry in the sun.
